Gahori Mankxo Laihaak (Assamese Pork Curry with a Twisted Mustard Greens).

Introduction:

Gahori Manxho Laihaak is a classic Assamese dish made with pork and mustard greens. It is a hearty and flavorful curry that is perfect for a cold winter day. This recipe adds a twist to the traditional dish by using sorrel leaves instead of traditional Assamese greens. Sorrel leaves have a slightly tart flavor that adds a unique dimension to the curry.

Ingredients:

  • 500g pork
  • 4 bunches mustard greens
  • 3 bunches sorrel leaves
  • 1 inch piece ginger, minced
  • 6 garlic cloves, minced
  • 4 green chilies, slit
  • 4 tbsp mustard oil
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Salt to taste

Instructions:

  1. Pressure cook the pork: Place the pork in a pressure cooker with 1/2 cup of water, slit green chilies, and ginger. Pressure cook it for up to 3 whistles until the pork is tender.
  2. Prepare the aromatic base: In a separate pan, heat mustard oil over medium heat. Add minced garlic and sauté until it turns golden brown.
  3. Sauté onions: Add finely chopped onions to the pan and sauté until they turn translucent.
  4. Add spices: Before the onions brown, sprinkle in the chili and turmeric powder. Sauté for 3 minutes to release their flavors.
  5. Introduce greens: Stir in the finely chopped sorrel leaves and mustard greens. Season with salt and let the greens cook in the aromatic spices. They will release water, creating a flavorful gravy.
  6. Combine pork and greens: Add the cooked pork (excluding the stock from the pressure cooker) to the pan with the greens. Let the meat simmer in the gravy for 15 minutes, allowing it to infuse with the greens and the rich flavors of the curry.
  7. Garnish and serve: If desired, garnish with fresh coriander leaves. Serve hot with steamed rice.
